Air Fryer Stuffed Zucchini Boats
Zucchini boats filled with a Mediterranean ricotta and sun-dried tomato mixture. Light, fresh, and bursting with flavor.
- 4 medium zucchini
- 1 cup ricotta cheese
- 1/4 cup sun-dried tomatoes chopped
- 2 tbsp pine nuts
- Fresh basil leaves
- 1/4 cup parmesan grated
- Salt pepper garlic
- Halve zucchini lengthwise, scoop out centers to make boats.
- Salt the boats and let drain 10 minutes.
- Mix ricotta, sun-dried tomatoes, pine nuts, basil, garlic.
- Fill zucchini boats with mixture.
- Top with parmesan.
- Cook at 350°F for 16-18 minutes until golden.
